recipes: Update S = WORKDIR recipes to use ${S} correctly

Browse Source 
Where recipes use S = ${WORKDIR}, ensure they are referencing ${S} correctly
to access files as soon we want to stop doing this in WORKDIR at which point
they would break unless corrected.
