Jaipaul Cheernam 2e8eba02ec snort3: fix build with OpenSSL 4.0

OpenSSL 4.0 returns const pointers from X509_get_subject_name(),
X509_get_issuer_name(), X509_NAME_get_entry(), and
X509_NAME_ENTRY_get_data().
