Leon Anavi 35c75d8978 python3-crc: Upgrade 7.1.0 -> 8.0.0

Upgrade to release 8.0.0:

- Remove Python 3.8 - 3.10 support
- Fix parameter name in documentation
- Switch from poetry to uv
